Traditional cheese cake
Mix ingredients for crust in medium bowl. Press into bottom of a spring-form pan and 1" up sides.
Soften cheese, add eggs one at a time, beating well after each. Add sugar and vanilla. Beat until frothy. Pour over crust, bake at 375 degrees for 40 minutes.
Stir together topping ingredients, pour over warm cake. Sprinkle with more chopped nuts if desired. Bake for an additional 10 minutes at 375 degrees. Cool slightly, refrigerate. Do not cut until cold.
Variation: Cherry pie filling or fresh strawberries or peaches may be used as a topping instead of chopped nuts. They should be added right before serving.
