I love all these ingredients and thought, if they are all mixed together how much better could you get??


  • 1 1/4 cup chicken or vegetable broth
  • 1 cup couscous
  • 1/3 cup chopped mushrooms
  • 3 garlic cloves, chopped
  • 1 T olive oil
  • 1 tsp shredded parmesan cheese or soy “parmesan” shreds


Bring broth and oil to a boil in sauce pan or microwavable dish. Remove from heat. Add couscous, mushrooms, and garlic. Mix well. Cover and let sit for 5 minutes. Stir and fluff couscous mixture. Top with cheese before serving.
