Authentic Gazpacho Andaluz
Ingredients
- 5 cups cold water
- 5 large tomatoes - peeled, seeded and chopped (seasonal)
- 1/4 cup minced onion
- 1 clove garlic, minced
- 1 cucumber, peeled and finely chopped
- 1 green bell pepper, minced
- 1/4 loaf stale or toasted French bread, cut into inch cubes
- 1/4 cup olive oil
- 1/4 cup wine vinegar
- 1/8 tablespoon salt
Method
Combine it all and chill.
Water and bread are to thicken and thin so it's a judgement call.
Only use hothouse or best seasonal tomatoes.
