Gramanita's Pumpkin Pie

Here's my family's recipe for making pumpkin pie, starting with an actual pumpkin.

Ingredients

  • 1 slightly smaller than basketball sized pumpkin
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1/3 cup shortening
  • Water
  • 2 eggs, beaten
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger (powdered)
  • 1/4 teaspoon cloves (ground)
  • 1 can evaporated milk

Method


  1. Prepare Pumpkin: Cut pumpkin in 1/2 (parallel to the stem). Remove seeds, stem. Bake, open sides down on cookie sheet, at 400F for ~40 minutes until browned at the edges and the skin is leathery. Allow to cool on cookie sheet, open side down until meat starts to pull away from the skin. Pull pumpkin out and mash into goo. You need approximately 2 cups for one pie, that is one moderately sized pumpkin.

  2. Piecrust: Make one pie crust. 1 cup flour, 1 t salt, 1/3 cup (plus a little) shortening. Add all of these in a bowl, work between fingers until mealy. Then add up to 1/4 cup hot water, and form into ball. Roll out for one 9" piecrust.

  3. Make custard: Mix all dry ingredients, add all wet ingredients, then mix well. Pour into the pie crust. Bake in center of the oven at 400F for ~45 minutes until edges are set and a knife comes out clean. Let cool, serve! Note that you will want to eat sooner rather than later. Custard doesn't keep.
