Hearty Cabbage Meat Pie

Dense brick of steaming deliciously seasoned meats topped with a sweet cabbage crust and cheese on top.

Ingredients

  • 1 lb lean ground pork or beef (I used pork, but beef is preferred)
  • 1 cubed medium potato
  • 1 chopped small head of cabbage (or half green, half red for color)
  • 1 roughly chopped yellow onion
  • 1 cup uncooked long grain rice
  • 1 cup shredded cheese
  • 2 chopped tomatoes
  • 1/3 jar of pasta sauce
  • 3 tbsp tomato paste
  • salt
  • black pepper
  • white pepper
  • tabasco sauce
  • bay leaf
  • dried basil

Method


Heat ground meat in deep skillet for a few minutes. Drain excess oil. Add bay leaf, onions and potatoes. Cover and lower heat to soften potatoes. (don't overcook, b/c it'll be in oven for an hour later) Add tomatoes, pasta sauce and paste. Cover. Preheat oven to 350. Season with salt, black and white pepper, tabasco, and dried basil to taste. Take off heat, stir in uncooked rice. Pour mixture into large casserole dish. Cover with shredded cabbage and top with cheese. Cover with foil and bake for 60+ minutes until rice is cooked and cabbage is soft.
