These are the best refrigerator pickles I've ever had.

Ingredients

  • 8 cups thickly sliced cucumbers
  • 2 small onions,sliced
  • 1 small green pepper,sliced
  • 2 Tbsp. Pickling salt(not regular table salt)
  • 2 cups white vinegar
  • 2 cups sugar
  • 1 tsp. Mustard seed
  • 1 tsp. Celery seed

Method


Extremely easy to make. Combine cucumbers,onions, peppers and salt in large bowl. Mix well. Pack cucumber mixture in jars(I just use an ice cream pail). Combine vinegar,sugar,celery seed and mustard seed in kettle. Cook over medium heat stirring til sugar dissolves. Pour while still hot over cucumber mixture in jars or ice cream pail. Let cool. Add caps if using jars. Put plastic lid on if using ice cream pail. Let pickle age 7 to 10 days in fridge before eating. Keep in fridge. Will keep several months in fridge.
