Latin Lasagna




(Public for All)

Good make-ahead dinner.


  • 1 lb ground turkey
  • 2 cloves garlic - crushed
  • 2 c salsa
  • 1 can (15 oz) black beans - drained and rinsed
  • 1 t dried cumin
  • 1 t chili powder
  • pinch cinnimon
  • salt and pepper
  • 6 flour tortillas (8")
  • 8 oz low fat cream cheese - softened
  • 1 pkg monteray jack or sharp chedder cheese - separated
  • chopped tomatoes, lettuce, green onions, and/or black olives for topping


Preheat oven to 400. Oil 13x9 baking dish. Brown meat with garlic and add spices while cooking. Add salsa and black beans. Simmer for a few minutes. Mix cream cheese and shredded cheese. Transfer a little of the meat sauce to pan. Top with tortillas, then cheese mixture, then meat. Repeat until ingredients are gone and top with remaining shredded cheese. Bake for about 20 minutes or until heated through. Let stand at least 5 minutes before serving. Top with tomatoes, etc.
