Refreshing grilled chicken on pasta with a light sauce.
Juice lemons and add half to medium-sized mixing bowl for the marinade - reserving other half. Zest one lemon into bowl (it's easiest to do this before juicing that lemon). Add half the garlic, salt and pepper, and a few tablespoons of olive oil to juice and zest. Wisk together with salt and pepper and add chicken. Marinade for at least a few minutes and up to a few hours. Grill the chicken until done. While the chicken is on the grill, cook the pasta according to the package. In a medium-sized saucepan, melt the butter and a bit of olive oil. Add garlic and saute for about a minute (careful not to burn). Add remaining lemon juice. Toss sauce, pasta, parsley, and parmesan. Slice chicken and serve.
