Old-fashioned pudding from my 98 year old Aunt!
Sift together sugar, flour, cocoa powder, salt into top of a double boiler. Add eggs. Slowly add milk, stirring until smooth. Cook over boiling water stirring constantly until thick. Remove from heat and add butter and vanilla. Can be used as pudding or poured into baked 8" pie shell. Top with meringue.
Meringue: 3 egg whites 1/8 t. salt 1/4 t. cream of tartar 6 T. sugar Beat egg whites and salt with cream of tartar in small deep mixing bowl at high speed unti soft peaks form. Add sugar gradually, beating after each addition. Conintue beating until meringue stands in stiff peaks. Spread over cooled pie filling beginning with edges and covering entire pie. (be sure to seal edges.) Bake @ 350 degrees for 12 to 15 minutes, until browned.
For banana pudding: layer vanilla pudding, vanilla wafers, bananas into a large bowl beginning and ending with pudding. Can be topped with meringue if desired. If covering with meringue make sure your bowl is oven proof.
