My grandma's mom used to make this for her kids, my grandma used to make it for her kids, my mom used to make it for her kids, and I don't have children but it's one of my favorite dinners. It's quick, easy, cheap, and pretty good.

Ingredients

  • 1/2 cup raw elbow macaroni (any size will do. I prefer small.)
  • 1 16 oz. can of tomato juice (make sure you don't accidentally buy the unsalted variety!)
  • 5-8 1x1 inch cubes sharp cheddar (or whichever cheddar you like best)
  • 1 tsp salt
  • 1 Tbsp olive oil
  • 2 cups water
  • sauce pan w/ lid

Method


Put water, olive oil, salt and macaroni in sauce pan. Bring to a medium boil. Boil for about 8 minutes. Strain macaroni. put tomato sauce in pan with some water to thin it out. put mac in pan. bring to simmer, then take off of heat arrange cheese on top. cover until cheese melts. dont stir the cheese in or anything, leave it in chunks or else the texture becomes weird.
