Ingredients

  • 1 filet of salmon
  • 2 oranges
  • 2 lemons
  • 1 lbs of course salt
  • fresh dill
  • fresh thyme
  • anice seeds
  • 1/4 EVOO
  • 1 fresh fennel
  • pepper
  • 2/3 tsp of sugar

Method


  1. Clean back off 2 Sprinkle w/ sugar
  2. Cover with coarse salt and kosher salt
  3. Dill/Thyme/anise seeds
  4. Zest orange and lemon
  5. leave for 2-3 hours (while it cures)
  6. Wash/dry
  7. cut thinly 9.add salt
  8. squeeze lemon and orange over 11.add dill and thyme
  9. olive oil
  10. Cover in fridge for 1 hour-3 days
