I stumbled on this recipe when searching for recipes to add to We Eatt and remembered how much I loved it. It serves 10, and you could substitute shortening instead of olive oil for a more authentic feel.

Ingredients

  • 1 tbsp olive oil
  • 1.5 cup long grain rice
  • 1/4 of chopped yellow onion
  • 3 cloves of garlic
  • 2 whole tomatoes from 15 oz can (of whole tomatoes)
  • 1/4 cup liquid from 15oz can above
  • 40 oz chicken broth

Method


  1. Heat the oil on medium high heat

  2. Add rice, stirring constantly

  3. When rice is brown add the onion and garlic

  4. Add 2 tomatoes, squish them. Add the tomato liquid and chicken broth

  5. Reduce to medium low, simmer for 20-30 minutes until liquid is gone
