Perfect warm up for a February night in Michigan (will it ever be summer?)

Ingredients

  • 2 cups uncooked macaroni
  • 2 T butter
  • 1/2 onion chopped
  • 2 1/2 cups milk
  • 2 T flour
  • 1/4 t pepper
  • 1/2 t chili powder
  • 1/2 t crushed red pepper
  • hot sauce - as much spice as you like :)
  • 1 1/2 cups shredded cheddar cheese
  • 2 cups shredded Mexican blend cheese

Method


Cook macaroni to package directions. In another sauce pan cook onions until soft in butter. Add flour and pepper. Add milk and whisk until it begins to thicken. Add cheddar and 1 1/2 cups of Mexican blend cheese. Stir until cheese is melted. Stir in macaroni, chili powder, crushed red pepper, and hot sauce. Mix well and pour into 2 quart baking dish. Sprinkle remaining cheese on top. Bake at 350 for 25 minutes. Let stand for ten before serving.
