Very simple and very tasty
Cook bacon until crisp. Remove from pan, drain on paper towel, and crumble. Discard all but 2 tablespoons of bacon fat from pan. Cook shallot for 1 minute in fat. Add vinegar, sugar, mustard, oil, and salt and pepper. Bring to boil. Pour over spinach, toss, and sprinkle with bacon.
