Tomato salad over grilled bread

Ingredients

  • 1 loaf ciabatta bread - cut into 1/2 inch slices
  • olive oil
  • 1 lg clove garlic - peeled
  • 3 large tomatoes - diced
  • 3 T fresh basil - jullianed
  • 1/4 c balsamic vinegar
  • salt and pepper to taste

Method


Heat grill pan or outdoor grill. Lightly drizzle bread slices with olive oil on both sides. Grill bread for about 3 minutes on each side, or until grill marks appear. Remove bread and rub immediately with garlic clove.

Combine tomatoes, basil, vinegar, few tablespoons olive oil, and salt and pepper.

Serve tomato sauce over bread
