Tortellini with Roasted Red Peppers

Cheese stuffed Tortellini with Roasted Red Pepper Sauce and sauteed onions


  • 2 - 12 ounce packages store bought Tortellini
  • 2- 9 ounce jars roasted red peppers
  • 1 cup chopped onions
  • 2 cloves of garlic
  • 1 teaspoon sugar
  • 1 teaspoon dried basil (or fresh if you prefer)
  • Olive oil
  • salt and pepper to taste
  • Parmesan cheese


Prepare tortellini according to package directions. Drain peppers and place in food processor, cover and process until very smooth. Cook onions and garlic on medium heat in olive oil. When tender add sugar, basil, salt and pepper. Stir and heat sauce throughout., Serve tortellini covered with sauce and sprinkled with cheese.
