Vegetarian Southwest Eggrolls

Kinda like Chili's Southwestern Eggrolls...but without chicken :)

Ingredients

  • 2 tbsp Olive Oil
  • Half a red bell pepper-minced
  • 1/4 cup green onion-minced
  • 1/2 cup frozen corn
  • 1/2 cup black beans-drained well
  • 1 can diced green chilis
  • 1/4 cup frozen spinach-thawed
  • 3/4 cup shredded Monterey Jack cheese
  • cumin,chili powder + salt to taste
  • *DASH* cayenne pepper
  • 7" tortillas

Method


Saute red pepper and onion in olive oil for 2-3 minutes til soft Add corn, black beans, spinach, chilis and all spices. Cook for 4-5 minutes. Mix well! Remove from heat and stir in cheese until melted. Microwave tortillas 1 and 1/2 minutes Roll filling into tortillas TIGHTLY Now you can do one of two things...either... Cover and freeze for at least 4 hours then fry in hot oil until golden brown, OR... Spray with cooking spray and then bake at 475 for about 7 minutes on each side until golden brown.
