Layered salad with a Mexican twist


  • 4 cups of lettuce
  • 1/2 cup Mexican blend shredded cheese
  • 1/2 can of black beans
  • 1 1/2 cup of shredded chicken
  • 1/2 cup grape tomatoes sliced in half
  • 1/2 cup sliced black olives
  • handful crushed tortilla chips
  • Chile dressing:
  • 1/2 cup mayo (I used low fat and it was still good)
  • 1/2 cup sour cream (low fat again )
  • 4 ounce can of chopped green chile pepper
  • 2 teaspoons of chili powder
  • 1 clove garlic crushed
  • 1/2 lime juiced


Mix ingredients for dressing. I like to make it a day ahead and let it chill in refrigerator. I also add a little water to the dressing so it's not quite so thick.

Layer ingredients for salad in th following order, salad, cheese, beans, chicken, tomatoes, olives, dressing, tortilla chips
