Layered salad with roasted chicken and homemade ranch dressing

Very pretty salad and great for entertaining

Ingredients

  • 3 C baby spinach
  • 2 C shredded cooked chicken
  • 4 hard boiled eggs - quartered
  • 1 red pepper - sliced
  • 1 head iceberg lettuce - chopped
  • 2 carrots - peeled into ribbons
  • 1 C shredded chedder cheese
  • 1/2 C cooked and crumbled bacon
  • Dressing:
  • 1/2 C sour cream
  • 1/2 C mayo
  • juice of 1 lemon
  • 1 clove garlic - crushed
  • salt and pepper to taste

Method


Layer all salad ingredients in order in large clear bowl, reserving cheese and bacon. Mix all dressing ingredients and spread on top of carrot layer. Sprinkle with cheese and bacon. If not serving immediatly, add dressing and cheese and bacon just before serving. Vegetarian - use pre-cooked artichokes instead of chicken and omit bacon.
