50% Cornbread and 50% Bread Mixture. A nice spicy taste is acheived by making the turkey stock by boiling the giblets in a large sauce pan containing jalepenos before adding the resulting stock to the dressing.

Ingredients

  • Turkey Giblets from the turkey
  • 1 Medium Size Can Whole Pickled Jalapeno Peppers
  • 2 Chicken Bouillon Cubes
  • 2 Stalks Fresh Celery
  • 3-4 Texas Sweet Yellow Onions
  • 2 Eggs
  • Very Large Mixing Bowl
  • 3 Individual Packages of Cornbread (where you add milk and egg and bake in 8 inch pan).
  • 1 Bag, Pepperidge Farm Herb Dressing
  • 1 Stick of Butter
  • Salt, Pepper and Sage to taste

Method


Place giblets in a medium size pan. Add water, contents of can of jalepenos, and bouillon cubes. Bring to boil, and turn down the heat to a soft boil, adding water as needed.

Preheat oven and prepare cornbread in three pans. Bake, remove, and let cool.

Chop onions and celery. You should have at least 4 cups of each. In large mixing bowl, add the bag of Pepperidge Farm dressing. Add cornbread by removing the cool cornbread from the pan and using your fingers to shred it into the bowl. Add the celery.

Melt the entire stick of butter in very large skillet and add onions. Saute, stirring frequently, until onions are just starting to turn color. Immediately add onions and butter to the bowl. Whisk two eggs in a small mixing bowl and pour over dressing.

Add salt, pepper, and sage. Start with about 2 tbs of sage. You can always add more if need be. Stir dressing thoroughly. Then start adding the giblet stock to the dressing, stirring as you add. Do not add the jalepenos to the dressing. They have done their job by spicing up the stock. Add additional salt, pepper and sage to taste. Keep adding stock until you feel it is sufficiently moist. You should have some stock left over, and I personally like to save it (and chopped giblets) and add it to the pan drippings when you make the gravy just before the holiday meal.

Stuff the turkey (if desired) and put the remaining dressing in a baking dish to heat before the meal.

Some optional ingredients that can be added are raisins, walnuts, chopped cranberries, and the like.
