Another version of meatloaf, but one with sugar and spice dueling for mastery in your mouth. Not for the faint of heart.

Ingredients

  • Meatloaf:
  • One pound ground beef
  • One fresh tomato
  • One Bell Pepper
  • One Medium Onion
  • 2 Slices of Freshly Toasted Bread
  • Worcesteshire Sauce
  • 1Tbs Horseradish (optional)
  • 1 Egg
  • Slices of Bacon
  • Sauce:
  • 3/4 Cup Ketchup
  • 2 Tbs Brown Sugar
  • Worcesteshire Sauce (to taste)
  • Black Pepper
  • 1-2 Tbs Chopped "Nacho Style" Jalepeno Peppers

Method


Preheat oven to 350 degrees.

Place hamburger in large maxing bowl. Chop up tomato, onion, green pepper and toast slices and add to hamburger. Add horseradish (if desired) and egg, and finally add worcesteshire sauce, salt and pepper to taste. Combine together and place in appropriately sized baking dish. Mold to where it is flat on top, and same thickness throughout.

I like to use a larger baking dish, and oven bake some potatoes along with the meatloaf at the same time.

Place slices of bacon on top of meatloaf mixture, and place in oven. Bake for 30 minutes.

While meatloaf is baking, make the sauce. Combine the ketchup, brown sugar, black pepper, and chopped jalepeno peppers. Stir until blended.

Remove meatloaf from oven and remove the bacon from the top of the meatloaf. Spread the sauce evenly on top of the meatloaf, replace the bacon on top of the sauce, and put back into the oven to bake for another 30 minutes.

Remove from oven and serve.

Other variations: Use 50% sausage instead of 100% hamburger Add some chopped cilantro to the meat loaf mixture (adds a nice flavor)
