I re-created my own carrot salad today and used some of the fresh spearmint that’s growing on my windowsill. This one is very easy to make and will last for days in the refrigerator. I hope you like it!

Last night I made a vegetarian/vegan Pasta Fagioli. I had been traveling for a couple of weeks and was so happy to get back in the kitchen to make a real meal.

I love all the bright colors and the light and fresh feeling you get when eating raw. Today I made some applesauce on the fly, and it turned out so good that I think this recipe might become my staple summer snack.

t’s my raw version of pad thai. I used a ceramic vegetable peeler to turn zucchini into noodles and whipped up a raw version of a traditional peanut sauce using raw almond butter.
