Tried and true Tortilla Soup recipe. This started as a recipe out of Southern Living, but so many changes to that original recipe have been made that I'm not even sure what that recipe was anymore! Great for a cold day and even better for leftovers!

Ingredients

  • 4 corn tortillas cut into pieces
  • 1 large onion chopped
  • 4-6 cloves of garlic
  • 1 handful fresh cilantro
  • 3 tbsp of vegetable oil
  • 1 grocery store rotisserie chicken chopped
  • 2 qt of chicken broth
  • 2 can of Rotel
  • 2 tbsp of cumin
  • 1 bay leaf
  • 1 can whole kernel corn (drained and rinsed)
  • 1 can black beans (drained and rinsed)

Method


Sautee corn tortillas cut into pieces, onion, garlic, fresh cilantro in the oil. Add the rest of the ingredients, plus fill two rotel cans with water (or as needed) and boil, reduce heat and simmer 30 minutes.

Garnish with fried tortilla strips, chopped avocado and cheddar cheese. A healthy alternative to the fried tortilla strips is to bake them in the oven.
