Preheat oven to 400 degrees Brown the beef over medium high heat, breaking up any large pieces, drain if needed. Add beans and rotel, simmer for 5-7 minutes Add beef/beans/rotel mixture to a 9x12 inch casserole dish Whisk egg and buttermilk in a large bowl, Fold cornbread mixture into egg/buttermilk, add butter and cheese. Mix until just combined. Top the beef mixture with cornbread, smooth out the cornbread. Bake 20 minutes until a knife goes cleanly through the cornbread and the beef is bubbling.
