Three way Pork Roast

Shortly after meeting my new husband, I discovered he wasn't a big fan of leftovers. I've always cooked big meals and had to find ways to disguise those pesky leftovers so he would eat them. This trio has gotten loads of praise since I started making it

Ingredients

  • DAY 1
  • 5 lb pork shoulder roast (trimmed of excess fat)
  • 2 lbs small red skinned potatoes
  • 1/2 lb baby carrots
  • 1 lg yellow onion
  • 2 Tbsp season salt
  • Pepper to taste.
  • DAY 2
  • 1 12 oz bottle of your favorite BBQ sauce
  • 4 oz Cola
  • DAY 3
  • 1 prepackaged pizza crust (I use the ones you find in the refrigerator section next to the biscuits)
  • 1 to 1 1/2 cups shredded cheese ( I use Colby/jack)

Method


DAY 1 Season the pork shoulder with your favorite season salt and pepper.

Rough chop onion

Put it all in a Crockpot and add enough water to cover. Cook on high for about 6 hours.

When it's done, take out the roast and let it rest for at least 10 minutes. It's easier to slice this way.

Serve on a platter with the potatoes and carrots.

DAY 2

Now comes the fun part. Take all that delicious leftover meat and put it back in the crockpot. Add the BBQ sauce and cola. Cook on low for about 6 more hours. Serve on toasted buns.

The leftover potatoes and carrots...Easy...just discard the leftover liquid and give them a rough chop. Add your favorite potato salad ingredients and Woo Hoo, you have a completely different meal that no one will know is leftovers.

DAY 3

That is IF you have leftovers from the BBQ... Chop or shred that leftover BBQ (it should shred easily) Roll out your pizza dough Spread it with the BBQ and sprinkle with cheese Pop it into a 375 degree oven for about 15 to 20 min (until cheese is melted and crust is golden.

Now you have a great BBQ pizza that you can serve with your favorite tossed salad.
